Lime does two things to surrouding soil: raises PH of soil and adds calcium, an essential nutrient in plant growth. Many fruit trees prefer soils that are PH 6.0-6.5, so if your soil is highly acidic <6.0, you will want add lime. Soil PH can easliy be determined by a soil test. Pelletized lime insures a uniform and gradual absoption of lime into soil. I'm assuming you already have well drained soil in coastal Texas, which is usually the case in coastal (sandy soil) areas. Fertilization is preferred for optimum plant health: with a fertilizer high in Nitrogen. Lime is only a supplement used to adjust PH and add calcium. You will get added growth due to a more optimum PH but not due to the lime itself. There is no added growth benefit that I'm aware of in deciduous fruit plants due to lime. Anna or Dorsett Gold apples will do best in coastal Texas. Both will ripen early to mid-June (early for most apples).
