Question:

Anyone have a really great recipe for Key Lime Cookies?

I am sending some baked goods to a friend for Christmas and he LOVES key lime pie, but he lives a couple states away, so mailing a pie, well that's pretty much out of the question BUT I thought maybe cookies would ship better, maybe even key lime bars? Any suggestions or recipes would be apprciated! Thanks!

Answer:

You probably wont find any there. You might want to check online. Try searching for key west key limes.
I am a former chef and live in Toronto, and they are a seasonal thing even here, I see them in the spring, and here have seen bottled Key Lime juice, if unable to find them then 70% fresh or bottled lime juice and 30% lemon juice, and a bit of rind from the limes, grate that first before juicing, but fresh limes are not cheap this time of year anywhere in the GTA and Golden Horseshoe area, so you will have used the alternative, I have bought them here and for 1 bag at $3.99 for 15-18 Key Limes, you get basically the amount of juice you need for 1-2 pies that all.
