Alright, Well. I have been into motorcycles ever since I was a little boy. I have always loved custom Pro Street style Choppers because of the phat tire on the back, the long, low, sleek look, and just because they have their own style and character. Too me they are like the Hot Rods of the Motorcycle world. I have been watching Biker Battleground Phoenix and all they customize and build are baggers. I know they are more comfortable, accommodates a stereo, lcd/gps, and storage as well. Paul Yaffe is on the show and he used to build a lot of badass choppers like on the show Biker Build Off that used to come on TV that he was featured in. I see the count still building choppers (Counts Customs) that comes on history channel. Do people still like Choppers? Or are they just played out?

16 over choppers have been out of style for more than 20 years. Look at any group bike picture from the past 60 years I guarantee you will see quite a few bobbers that look just like the ones going down your street today. Chances are if you ask around some of your friends probably have some old shovelhead evo parts they will just give you for free. You can also pick up a lot of parts at yard sales in older neighborhoods where old guys have died their kids dont know what the parts are just want to get rid of them.
I basically agree with everything mysticmaster33 said. just make sure to get an axle-back system than just the muffler itself. you don't wanna have to cut off the muffler and weld a new one on. get the axle back that will bolt on directly to your mid pipe then you can still save your stock muffler for whatever reason. and like he said you could work your way from there if you wanted toi.e. headers, cat back system.
The problem, as Jason hinted at is this: Real choppers ARE BUILT AND NEVER BOUGHT If you are not in a big biker area? You won't find real choppers. You might find people who like to ride motorcycles, but being able to ride and tinker with bikes is very different from being able to cut, chop, design, and get a nice product out. Most people are in the second-hand chopper world. Basically said, they take some old Harley, put on new extended forks, and then call it a chopper. That isn't a chopper, that is a modified Harley. Even if you put on new designer fenders, or a custom tank, or whatever, its still a modified Harley. I liked watching the American Chopper shows just for the mechanics and designs, but those were questionable in terms of being choppers. Usually had too much crap on them and they were obsessed with how they designed the drive trains. Basically had the same engine in every single bike, was annoying. As for minimalists like Jason's bike there, I am not a huge fan, but as he mentioned, it is about as true to the term as you can get.
Custom motorcycle styles go in phases - one style will be in fashion for a few years, then another style will become popular. Eventually, everything cycles round and a style that was fashionable ten or twenty years ago, will be the bike that everyone wants again.
