The possible problem with air dry clay for this use is that it gets its strength from a binder added to the clay material and having hot material (and smoldering incense is hot locally) might release fumes from heating/burning the on the clay surfaceYou might be able to insure no added odor with a small area of aluminum foil where you lay the incense to spread the heat And some air dry clays are organic (made from flour/corn starch, etc.) and will have more problems that earth clay/binder mixes.
