Question:

COOKIE QUESTION COOKIES!!!!?

i don't have problems making other cookies but when i make oatmeal raisin cookies the bottom burns and the top is under baked or under cooked whatever its calledI use aluminum tin foil on the bottom and nothing else what can i do to make sure they bake evenly??????

Answer:

Put the cookies directly on the cookie sheetThe foil may be holding too much heatPut the cookie sheet on a higher rack in the ovenThere's a lot of sugar in oatmeal cookies and the excess heat from the foil may be too hot for the bottoms, especially if you have the shiny side next to the cookiesBuy an oven thermometer and check to make sure the temp in the oven is the same as the setting on the knobAs soon as you take the tray out of the oven, remove the cookies to a cooling rackLeaving them on the cookie sheet will mean additional cooking on the bottom.
