I don't know many but I really like Nightwish, some other bands (and good songs) similar to them are; Apocalyptica - I'm Not Jesus, SOS Anything But Love, Bittersweet. Within Temptation - Frozen, Jillian, Memories.

Metallica released a whole album of symphonic metal - it's called SM, which has a lot of arrangements of their classic songs. It's actually the only metallica album I like, I can't listen to their original tracks because I want to hear the orchestra parts! Some other symphonic metal bands are within temptation, edenbridge, sonata arctica and even evanescence on occaision - they have a track called lacrymosa which lifts music directly from Mozart's lacraemosa from his requiem.
