Does anyone have some simple ideas for a single frying pan dinner?

I am currently over the road with my husband (he has a flatbed trucking job) and my kitchen is suddenly very very limited!! I have a portable stove with a single burner, and I have a medium size panI cook simple meals like turkey hot dogs, turkey burgers, and homemade burritos, but that is all I can think of to cook for us [ I need some good and EASY ideas for some variety that will be relatively easy to clean afterward ( I don't have a sink, so I do alot of wiping to clean my pan ) please let me know if you have any thoughts ~

Stir fry some meat and vegetablesChicken, garlic, onion, snow peas, carrots, mushrooms, etc etcAnything you wantMake a vegetable stew-potatoes, carrots, celery, parsnips, is my favourite comboA bit of onion or garlic is good tooPut a bit of butter in the pan, turn the heat on medium/low and start adding the cut-up veggiesAdd just enough water so it doesn't burn, put the lid onTurn the veggies over from time to time so they don't burnYou can add ham or any other already cooked meat at the end, just in time for it to get warmIt's also good with cheese grated over it at the endMake an omelette or frittataYou can stuff a lot of vegetables into one of those, and cheese or sliced meatHow about corned beef hash? Cook potatoes and onions together, add corned beef when those are done, cook long enough for it to get warmRemember that you don't really have to cook the whole meal at one timeThere is no reason why you can't boil some pasta, drain it, toss it in a bit of olive oil, and set it aside in a bowlThen make your sauce in your one pan and add the pasta at the end to warm it up before servingYou can jazz up a bottled sauce by frying a bit of garlic in olive oil, then adding the jarred sauce and cooking it brieflyTry Shepherd's PieBoil the potatoes, mash them and set asideBoil any other veg you want with itFry the ground beef and when it's done, put the other stuff on top and put the lid on, heat on very low, just to let it all warm up againIt's very easy to clean even the dirtiest pan in very little waterPut a bit of water in the dirty pan, set it over the stove to get warm, scrub all the gunk off with a brush, dump it out and finish cleaning with a damp paper towelYou can get all the cooking equipment you really need into one medium size plastic boxI do it when campingMakes all the difference to have the right equipment.
