Question:

Have a GOOD meatloaf recipe??

I've been craving meatloaf for dinner tonightI can't find a good recipe! Can anyone help me out??

Answer:

I like this one: Judd Family Meatloaf 2 1/3 cups coarsely crushed soda crackers (1 1/2 tubes from package) 2 pounds lean ground beef 1/2 pound breakfast sausage patties 1 large egg 2 medium onions, chopped 1 medium green bell pepper, minced 3/4 cup ketchup plus 1/4 cup for the top 1/3 cup Worcestershire sauce 1 teaspoon salt 1/2 teaspoon black pepper This is one of Naomi's favorite family recipes published in her book, Naomi's Home CompanionFirst, take any rings off your fingers and send them to me! Preheat the oven to 325?? FIn a heavy-duty, plastic food-storage bag, place the crackers, seal, and roll over with a rolling pin until crushed but not powderyIn a large bowl, with clean hands, mix together all the ingredients except the 1/4-cup ketchup for the topMix thoroughly but lightly, being careful not to pack the meat too muchPlace in a 13 x 9 x 2 inch baking pan and shape into a loafCover with aluminum foilBake for 45 minutesRemove the foilSpread the top of the loaf with the 1/4-cup ketchupBake, uncovered, another 60 minutesLet stand for 10 minutes before slicingMakes 10 ServingsSource: Naomi's Home CompanionGT Publishing Corporation (1997)
Two reasons: 1It closes off air circulation from direct convention with the contents of the foil wrapped package2Aluminum is high in albedo (reflectivity), hence low in absorptivity and low in emissivity as per Kirchoff's law This makes it such that aluminum is LESS OF A PARTICIPATOR in black body radiationThink of aluminum foil as a radiative insulatorIt doesn't like to absorb incoming radiation, and it doesn't like to emit outgoing radiation (relatively speaking).
What Does Aluminum Foil Do
It doesn't let hot air escape, which keeps whatever inside warmAlso it doesn't transmit heat to the outside air like seran wrap would do because the foil doesnt heat up easily, so the heat isn't transferred to the air outside the foil.
Well, it doesn't very well at allIt does reflect heat back omitted by what ever it coversHowever, because it is metallic and thin, it also dissipates heat efficiently to the atmosphere around itThe same way a car's exhaust pipe cools down quickly.
