What type of fixtures should I look into? I already have the overhead plan designed, I just need to know how to aesthetically raise and lower it.
I'd build the ceiling as a single panel that's strong enough to stay flat against it's own weight. I'd hang it from above with linear actuators all wired to the same circuit and switch to raise it and lower it. Those would need to be long enough for your desired drop, and strong enough to hold the weight of the ceiling with a calculated spacing around the perimeter. Whether more are needed in the center areas depends on the span of the ceiling. It will cost a small fortune.
