You need to slice them thinly, an 1/8th to a 1/4 inch or so so that they will dry out quickly. Lay them out in a single layer on a screen, plastic or stainless steel, and cover them with another screen of the same material. Place them in full sun and they should dry out quickly. Place them in an airtight container when dried and freeze them or store them in a cool dry place. A food dehydrator will work as well if you have access to one. A dehydrator is the easiest way to go. They are not too expensive. Another option: place the sliced tomatos on a cookie sheet and place in the oven on a low temp (250F). I would spray the sheet with oil first so that they won't stick. When they are dry to the chewy stage, they are ready to put in a bag and put in your freezer. You can crumble these dried tomatoes into dishes that you are preparing. They have a very intense tomatoe flavor!! Good Luck!!
You can simply dry them on a table in the sun.. Just use screens to cover. Or get a food dehydrator.....
my neighbor just laid some out in a plastic baggie and kept them in the sun.
