Absolutely. I don't know all the differences in all the different years of GSXR, but they are all fairly similar. The lock tumbler (part you put the key in) is just held in place with a little clip that puts spring tension on the cylinder. You can either push or pull that clip out and the lock cylinder will pop right out. If you're talking about the physical Latch, that the seat pin locks into, that's typically held on with 2 bolts, and maybe a clip for the cable that leads between the lock and the latch. It's all designed to go together and come apart fairly easily.
You could use a lock-pick. But they're illegal unless you're a licensed locksmith. Might be better to get some spare keys and hide them here and there.
