How do I get perfect homemade bread?

I can usually get my bread to rise great the first time and so on but it falls flat in the ovenWhat gives??

I make the easiest breadIt is not a pretty bread but it tastes great and I have never had it turn out bad3 cups self rising flour 3 Tablespoons sugar 1 bottle of beer DO NOT USE METAL SPOON OR BOWL DO NOT USE A REALLY DARK BEER Lite beers work best Add in this order and stir with a wooden spoon ( it will be a gooey dough ) Bake at 375 degrees for almost an hourYou may have to adjust the temp depending on your ovenStick a knife into the center to make sure it is completly doneTurn out the bread onto a large piece of aluminum foilCoat the outside in butter Wrap in the aluminum foil Let cool completely Unwrap and thinly slice Arrange on a plate to serve This also does well to thick slice and make garlic bread or croutons.
