Question:

How do I roast vegetables in the oven?

What temp and for how long? Do I just put them in any pan, or do they need to be in a roasting pan so they can drip?I am doing asparagus, zucchini, red onion, mushrooms and carrots. Also, I am making a roasted vegetable pasta saladI am taking the roasted vegetables mentioned above and tossing them with pasta and balsamic vinegaretteIs there anything else I should add to make it better? I was thinking maybe gorgonzola?

Answer:

When I roast veggies, I usually cover a baking pan with aluminum foil and spray it with nonstick sprayI usually toss the veggies in a light coat of olive oil and sprinkle the seasonings, then cook at 400 degrees FAll those veggies have different cooking times, so you may want to do them all separatelyIt also depends on how thin you slice themI do know asparagus takes about 20 minutesThe zucchini and mushrooms get soft quickly so they probably wouldn't take as longI'm not sure about the carrotsSince this is your first time doing it, my advice would be to peek every five minutes or so to see how they are coming along Feta cheese is amazing with balsamic and pasta saladIt sounds delicious!
