How do you cook a well-done steak in the oven without it coming out dry?

No matter what I do, my steaks always come out dryI love to eat rib-eye steak and I like they well-doneSome one told me to sear them on both sides to seal in the juices and cover my pan with aluminum foilBut they don't come out as tender and juicy as I would like themAny Ideas on what I should do?

Sublimation causes the cubes to become smallerSublimation is also the cause of freezer burnAny meat in the freezer is also losing water unless it is sealed airtight.
Mike's right: sublimation is the water in your ice transitioning from solid state to vapor state without going to liquid state in betweenBut it will happen in any freezer; it doesn't have to be self-defrostI learned this as a kid, when I tried to save some snowballs for summer play:-)
You need to use a rub on your meat first of allThen, I pan fry my steaks, and make sure that I use plenty of liquid (either olive oil or worchestire sauce) So, maybe add some olive oil to your panCheck on it every so often and add more liquid if it looks like it needs it.
