How do you make a perfect baked potato? .?

I try to cook one in the oven but I get the middle part sort ok, the part near that (not the skin, just not the middle) rubbery and the skinI don't know what the skin should be so can't describe that.But how do I get it so the inside is even and not half rubbery and half, not fluffy but not rubbery?I only have two racks in my oven.

Wash the potatoes then dry wellCoat lightly in oil, then sprinkle with sea saltWrap each potato in one layer of aluminum foilPlace into pre-heated 350 F oven directly on rack, not touchingBake 1 hour, then squeeze to test donenessTo do this without burning yourself, fold a tea towel in half, and protect your hand with itThe potatoes should give slightly under pressureBe careful not to squeeze too hard and break them This is how I bake them and they come out great - tender skin, fluffy inside.
