baking soda will put it out, a regular box should be enough for a fire like that. turning off the burner and switching to another one would have prevented the fire, but if you didn't clean off the margarine before using it again the fire would have happened anyway. you should get a small, disposable Halon extinguisher for the kitchen regardless of how many times you might spill margarine! they work well for all sorts of fires.
