I'm roasting vegetables (cauliflower, carrots, zucchini, broccoli, onions) in a 400°F ovenIt's been 1.5 hours and the vegetables are not softI'd like them to become softWhat should I do? I cooked them for 45 minutes covered and then the other 45 minutes uncoveredThey are currently back in the oven uncovered.

put thenm in a casserole or lasagna pan, add about 1/2 inch of water in the bottom of the pan, cover the pan with aluminum foilcook for about 20-30 minutes, drain water then broil for 3-5 minutes uncovered.
