Answer:

You do not need to grease the parchmentIt is similar to waxed paper, and your food will not stick to it If you turn the oven down about 25 degrees and bake it a little slower, you should not have the over browning problemMake sure to remove the cookie from the oven just before you think it is doneLeave it on the cookie sheet and allow the cookie to settle (let the cookie flatten) on the cookie sheet resting on the top of the stoveIt will finish baking outside the ovenAnytime something is browning to fast, just turn the oven down about 25 degreesIt will continue to bake, but not brown as muchIf you want to try the foil trick, just wrap foil around the edges of the cookie while it is bakingThe edges won't brown as much if they are coveredPersonally, it is so much easier to just turn the oven down a few degreesIt will take a little longer to bake, but it will be worth the waitGood Luck.and happy baking.
Aluminum is correct, but you don't need it until you notice the edges turning to darkYou place the foil over the edges of your cookie and tuck under the edge of the pan to hold it in placeYou also don't need to spray the panIt will make the cookie too oilyYou can put parchment down if you likeIt will make removing the cookie easier, and you can use the pan over again if you likeKeep on top of your cookie the outer portion will cook fast once it startsI find not more than 15 minutes is right, but I live in Toronto CanadaGOOD LUCK!
I by no means went by this yet i might say get some chewing gum and chew on that so that then you definately are nonetheless eating something devoid of ingesting a large form of energyi actually wish each little thing works out properly, solid luck!
Rogue is right about putting the foil around the outer edges of the cookie and the pan later in the baking if the edges are getting too darkMy concern is that you said you have 2 rolls of dough1 roll of dough is enough for a pizza panSo start with one roll and don't forget it expands and rises as it bakesSo spread the first one and decide if you need more dough, which I doubtBut add it if it's neededOtherwise, make a second large cookie or just slice it for regular cookiesI'm assuming you're baking this for your father for Father's DayI hope you both enjoy your day tomorrow! EDIT: In case, Rogue doesn't see your other questionIt's not necessary to butter or oil the parchment because some of the oils in the cookie come out onto it while it's bakingTurn it over on your cooling rack after about 5 minutes and you should be able to easily pull off the parchment paperThen turn it right side up to finish cooling.
