cook it for about the same as beef or any other animal, just check with a meat thermometer and you'll do fine.

First, let me say congratulationsSecondly, I hope you are utilizing the remainder of the meat as wellOn a hundred pound deer you should be able to have around 40 pounds of great eatingAlso, the backstraps and tenderloins are two different pieces of meatBackstraps lie on either side of the backbone on the outside of the animalTenderloins (or loins) are located on the inside of he body cavity in roughly the same area and are much smallerFor the backstraps, I would check the meat after about 30 minutes(Loins, maybe 15-20) You want to make sure the meat is not overcooked as sometimes venison can become dry and tough if cooked to medium-well or well doneHowever, this is not the cooking method I would recommendMy choice is to cut the backstraps into 2 thick steaks, wrap in bacon and grill over medium coals or pan fry in olive oil until medium rareWith the loins, I cook whole using the same methodEnjoy!!
