Yes you can use a pot, but I find it better just to cover it with foil.
It will be fineHowever you could use a cookie sheet, a larger plate or foil as a lid/coverEven a crock pot or a microwave safe bowl would work once you brown it in the pan/pot/skillet etcBUT IF YOU EVER COOK RICE REMEMBER YOU HAVE TO HAVE A TIGHT FITTING LID! MICROWAVE IS GOOD FOR RICE COOKING TOO WITH TIGHT LID OR TIGHT SARAN WRAP.
Pots tend to be deeper than a pan and don't have the diametreAs smoked sausages are already cooked all you need to do is put them in a pot with some water, cover with the lid and let simmer.
