it depends on how fast you chop :)
Plastic makes it easier to control the knife i think. I have had everything from bamboo, glass, wood, and a professional grade plastic cutting board that fast food and other restaurants use. My favorite is the plastic one for a few reasons, its easy care, cleaner, and because it is softer the knife dosent move around or slip when im cutting. The worst to me is bamboo and glass the knife just slides around.
Plastic is faster because it will not mold to the shape of the knife. If it is wood every time the knife comes into contact with the wood it will leave micro cavities which will add to the friction the more you use it and slow down the knife. Also plastic will last longer due to it not being saturated with liquids and is more reliable although more expensive
