Answer:

Key limes are distinctly different [than Persian limes, most familiar in U.S.]: they’re small, and paler in color, and they’re yellowish-green where their larger relatives are deep, dark green. Persian limes by contrast are the dark green fruits about the about the size of a small lemon. The shade of Key lime pie is another step paler and another step yellowier still. It’s the color produced by mixing the juice of Key limes with egg yolks, sweetened condensed milk and grated lime peel, then frothing and cooling the whole concoction. What you end up with is a wonderful dessert that’s pale green with just a hint of yellow. How did the Key limes get their name? Most likely, they originated in Southeast Asia, and were brought to Haiti by Christopher Columbus in 1493. From there, they made their way to the Bahamas, and then to Key West, in Florida. Since then they’ve been known in the U.S. as “Key limes.”

Swingle), also known as the Mexican lime, West Indian lime or Bartender's lime, has a globose fruit, 2.5-5 cm in diameter (1-2 in), that is yellow when ripe but usually picked green commercially. It is smaller, seedier, has a higher acidity, a stronger aroma, and a thinner rind than that of the more common Persian lime. It is valued for its unique flavor compared to other limes, with the key lime usually having a more tart and bitter flavor. Named after the Florida Keys, it is best known there as the flavoring ingredient in Key lime pie. BBWCHATT The old lady in Chattanooga, Tennessee, USA
