Question:

melting candy in silicone in ovenWill it stick?

I want to make a candy serving dish by melting mints on parchment paper in the oven BUT store is sold outCan I use a silicone baking dish to melt the candy? will it stick or slide out like wax/parchment paper? Don't want to risk ruining the dish

Answer:

Not sure I understand what you're doingIf you want to make a dish or bowl, you need to use a rounded form or need to be able to bend the melted/softened mints (too hot for your hands)And melted candies would just run down the sides of most things and end up flatAt any rate, most things won't stick to silicone very well or at all, so anything you have that's pure silicone (without too many scratches, etc) will workParchment paper is coated with silicone which is why it works(ArmorAll spray is silicone too but not food-grade)Other silicone items could be certain baking surfaces like Silpat, or silicone loaf pans or muffin tins, etcYou could probably just use another very slick surface (like glass like a casserole dish, or glazed ceramic like a plate or bowl) and also use oil on itThe candy might stick a bit (or not) but could be popped off after cooling, I'd betOr you could try a sheet of aluminum foil (probably oiled), then peel that off the candy.
