Question:

My husband bought a 10 pound bag of potatoes, what is the best way to use them before they go bad?

There are only 2 people in our household and I don't want to have to eat potatoes for every meal! I hate to throw them awayDoes anyone have any suggestions?

Answer:

I have IBS along with Crohn's and Barrett's EsophagusFor me when I have flair ups is when I'm under alot of stress, plus different foodsI usually avoid spicy foods, greasy foods, and when my IBS is acting up, I avoid milk productsFor me, unfortunately, Crohn's is my main problem with IBS as a secondaryI hope you find the right combination of foods you can enjoy and be able to go out and enjoy your lifeBeing afraid of the flareups can cause more of them to aggrevate your lifestyleMy flare ups are rare now that Im on the right medications, but when it does flare up, I usually end up in the ER with a medication readjustmentJust watch your foods, and when you go out to eat, remember, Special Order and you will do just fine.
Oven fries! Cut 4 potatos into wedges and toss with 1 Tbsp olive oil and your favourite dried spices (I use seasoned salt, cajun seasoning, garlic powder, oregano, rosemary, etc)Line cookie sheet with aluminum foil (makes for easy clean-up) and cook in a 400 degrees oven for 20 minutes Alternatively, you could do this but only cook the oven fries for 15 minutesCool and freeze in batchesThen, when you're ready to have oven fries one night, pop them back in a 400 degree oven, frozen, for 20 minutes to reheat and crisp upYou could probably do a good half of the bag that way and have it in the freezer ready to use.
