Other than key lime pie, what are some other desserts you can make using limes?

There was a sale of 10 limes for $1.00 at the grocery. We only used a few for making some guacamole and for sprinkling over some cucumber slices so I have like 8 leftover. I'd really like to make a dessert but don't want to make key lime pie. Anyone know any other desserts that call for limes and that are simple to make? Thanks in advance.

Rose's is just processed lime juice (like bottled lemon juice) mixed with corn syrup and water, so you could do that with bottled lemon juice and simple syrup (melted sugar). The end result would be pretty sad, and not something you'd want to put into a good drink. Squeezing fresh citrus juice doesn't take that much more effort and you will notice the difference in quality. If you are serious about your cocktails always use the juice of fresh lemons and limes. Some people say the exception to that is in making a true british gimlet, which calls specifically for rose's lime juice, but if you compare that with one made with fresh juice you will see why the sun set on that empire. There's a Rose's lemon. Or you could just make lemonade with far less sugar.
