Question about making turkey legs?

I am attempting to make Disney land/world turkey legsThe recipe says quot;roast turkey legs in oven at 250deg, turning several times for 3-4 hrs until doneOnce done increase the temperature to 375deg and cook for 15 mins or until skin is crisp and brownquot;I am cooking them in a glass casserole dishShould I cover the turkey legs or leave them uncovered and should I add any liquid to the bottom of the dish?

You need to leave the marinated turkey leg uncovered when you are roasting it in the ovenIf you covered it let say with aluminum foil, you are going to trap the moisture/stem and that moisture will not crisp the turkey's skinYou just need to pat the turkey leg dry after marinate (water, seasoned tenderizer, liquid smoke, brown sugar overnight) then you need to pat it dry with paper towel and spread a dry rub with paprika spice mixture over it before you roastKeep turning the turkey leg several times until the temperature reaches 180F then raise the temperature to 375F and let the leg crispUse a meat thermometer to test meat 165FPreferable to let the turkey leg sit on a rake with a tray to collect any oil/juice away from the crispy skin
