Answer:

If you want a nice crispy skin, then cook it at 450 degrees for the first 15-20 minsthen turn the temp down to 375 and cook for another hour or soYou know it is done when it is a nice, golden brown, the juices run clear - not rosy, the drumstick will wiggle around nicely like it is ready to fall off, and if you have a thermometer, stick it near the thigh but not touching the bone and the temp of the bird should be 170 or greater.
I roast a chicken at 350 for at least an hour and a half, or until the leg moves freely when wiggled up and down
This Site Might Help YouRE: How long do you roast a chicken for? What is the pound/cook time ratio, and what tempature? This is for a pan roasted chicken.
I haven't been cooking quite as long as those last two(but close), and perfectly roasted chicken is one of the best things I makeI go with about 20 minutes per pound in an oven around 350F, on the low side if anything, and cook until a leg feels looseCount on an hour and a half from start to finishBaste a couple of times during cooking with the chicken's own fat or with a bit of butter.
