I am pan frying New York steaks and I was wondering if there is an easy technique to make steaks well done, medium rare, and rare.Something easy to rememberTime and temperature and other details would be very appreciated.Thanks

Digital timerTake steaks out an hour or two before cooking so it comes to room tempGet pan rocket hot then put on steaksSet timer for 2 minutesThen rotate 45 degrees to another place on the pan (a pan with grill features helps)2 minutes(You need to move position because under where the steak was will absorb heat) Then flip steaks and move onto new spot on pan2 minutes, rotate to new spotRemove steaks to plate and cover with aluminum foil for 3-5 minutesThis will usually give you a rare steakIncrease time to 2:15 or 2:30 between flips/rotationsAlton Brown has a show on pan-frying steaksSearch YouTube.
