On most seats, there is a pair of handles above the head that look like mickey mouse ears. Pulling them down now only initiates the ejection, but also pulls a face shield down over the pilots head to help protect him/her from the relative wind. In addition, there is usually another handle located either on the side of the seat, or between the pilots legs, which when pulled up, initiates the ejection sequence as well. If you want to get even further into it, right after pulling the handle, before anything else happens, an explosive charge will blow off the canopy as seen in a lot of fighters like the F18, F16, the F22 and whatnot. In some aircraft, most notably the av8b (harrier) you will notice the explosive charge in a ring around the pilots head, which blows a hole in the canopy for the seat to exit through.
If there's one thing I learned from Bugs Bunny, this it is. The only thing on the entire instrument panel is a giant red button that says eject. You mash it as hard as you can, several dozen times, and just before the plane hits the ground, you eject and smash into the ground. The plane will stop in mid air. I think the lesson learned here is to never ever eject.
