Don't use the Quest fittings I don't even know if they still make them because they were so troublesome. Genova makes a variety of types that will work great. I used them about 15 years ago to install a water heater, (didn't want to bother with soldering) and they haven't leaked a drop. They use a compression system with a retainer and O-ring. Made out of CPVC, they work with any plastic pipe or copper. I extended the existing copper with polybutylene and connected to the heater.
