Those nails can still harbour bacteria no matter how much you clean them, and please don't take this the wrong way, but I find it really off-putting when I see someone with those around any aspect of food, whether it is preparation or serving. You can wear gloves that are made for the food service industry~ they will leave no residual flavor in the food you prep. Another thing, suppose you don't notice one fall off into your food and someone gets it in their mouth? It can easily happen if they are not properly applied. That would be horrible and would seriously make me gag if I ever found it in my food.

They do sell polyester resin (which probably hasn't been used on any quality boats in 25 years). I have given you two sites (links) below. Both offer top quality resin, and in fact I believe these two sources sell the exact same resin, but one (Glen-L) offers an optional amber tinted version that is absolutely beautiful, if you are not painting over it.
