One of my favorite summer dishes is super simple and no heat required! Plus the dish itself is cold, so that's a plus. I love just hitting the store looking for the nicest in season veggies and making a huge plate of bite sized veg. Then a simple lettuce salad with about 1 or 1/2 cans per person (depending on the size of everyone's tummies!) of the really good chunked canned tuna. (Not the cheapo stuff that'd you'd make a casserole with but the 3-4$ per can stuff.). Personally I like it best with Italian dressing or just oil and vinegar, but the kids are normally more into it if you offer ranch or something.
I don't think Mars can be terraformed because I don't think it has enough surface gravity to hold an Earth type atmosphere. So I would either: 1. Just send equipment to Mars. The equipment would assemble modular airtight greenhouse type buildings. To save money, the process would be slow and take a long time to cover the entire planet with greenhouses. 2. I would try to terraform Venus instead. This might seem harder, but at least it has decent surface gravity and plenty of sunlight. I would construct a huge reflective ring around Venus that would reflect away sunlight on the sunny side but allow radiant energy from the planet to pass on the dark side. Blocking enough light from the sun should cool down the planet enough to be livable. To save costs, the ring could be made extremely thin. By being a ring, it's orbit shouldn't decay like a regular satellite might.
