The first thing would be a material that does not get caught up in briars and burrs. It should also not inhibit the dogs movement and ability to do it's job. It seems to me, that many of the coats, vests and protective gear are mainly for larger dogs like labs and goldens, but I would think, there should also be something for the smaller dogs, like working spaniels.. edit: I can't see how pockets on a coat will help the dog or the hunter. It's just one more thing for the coat to get caught up in.
