I've been using compression fittings on 1/2 and 3/4 copper pipe for 30 years, never had one let loose, but have had pipe split open from high pressure. So, I would say the pressure rating is bunches more than the pipe. Sorry, I don't have an exact number.
Assuming you have a privacy lock, it sounds like the latch [the half round, tapered part that pops in and out of the door edge] may not be entering the strike [the metal plate with the rectangular shaped hole, that is mortised into the door jamb]. Make sure your hinges are tight to eliminate any door sag and if the latch still does not enter the hole correctly, the strike must be repositioned and the hole enlarged to allow the latch to enter the strike properly.
