The radiation interacts with the crystals. That causes photoelectric effect. photons (gammas) are absorbed, electrons are emitted (it's in the name). The electrons are then trapped in the crystals. When you heat it up, you free the trapped electrons. You measure the amount of electrons freed at the same time you heat it up. That's directly proportional to the amount of photons that were absorbed. It's also directly proportional to the amount of gamma exposure the person wearing the detector received.
