Yummy, healthy meals for one?

Hello,I have always enjoyed cooking, however, I am now living alone and most of the time I am only cooking for myselfI am also on a pretty tight budgetI like to eat healthy food, and pre-cooked meals (freezer food, etc.) are usually neither healthy nor tasty.Does anyone have a good spot for finding good recipes that are good for just one person? With many things, it's not really feasible to cut down the recipe to a size for just one person.I don't mind spending a lot of time or putting a lot of effort in to my cooking!

I am cooking for one now too - and at first it was daunting for me to even considerI have always cooked for a big familyThen one day I decided to just cook all my favorites and cut the recipes in halfThat was still too much usually but at least I could get a couple extra meals out of my effortThen I started buying those round aluminum tin and would freeze a meal at a time in individual serving so all I had to do was pop one out and reheat! they taste like freshly prepared and some are even better after the flavors have married a little longer in the freezerThis way I don't mind putting lots of extra ingredients and time into the preparationAlso - here is a tipI always hate buying a quart of butter milk or cream just for one servingSo now as soon as I buy the milk, cream, buttermilk - I freeze them in ice cube trays until frozen then I put them in a freezer bag and take out just what I neednothing goes to wasteTwo reg sized cubes is about a 1/4 cupyou can use the cream in any recipe except you can't whip it after it's been frozenBest of Luck to you
After it cools try some goo-gone spray or some cleaning spray or just wet it and see if it peels off.
