This one is super easyI found this recipe in my Betty Crocker Good and Easy Cookbook many years agoYou don't have to cook the lasagna noodles which is really niceIt is my go to recipe when I want to throw together a quick lasagna - it is really good! Easy Lasagna 2 cups ricotta or small curd creamed cottage cheese 1/2 cup grated Parmesan cheese 2 tablespoons chopped parsley 1 tablespoon chopped fresh or 1 1/2 teaspoon dried oregano leaves 2 jars (28 ozeach) spaghetti sauce 12 uncooked lasagna noodles 2 cups shredded mozzarella cheese (8 oz) 1/4 cup grated Parmesan cheese Optional: extra Shredded mozzarella cheese Directions: Mix ricotta (or cottage) cheese, 1/2 cup Parmesan cheese, parsley and oregano Spread 2 cups spaghetti sauce in ungreased 13 x 9 x 2 pan, top with 4 noodlesSpread cheese mixture over noodlesSpread with 2 cups spaghetti sauce and top with 4 noodlesNow you will repeat and spread 2 more cups of spaghetti sauce and top with 4 noodlesSprinkle with 2 cups mozzarella cheeseSpread with remaining spaghetti sauceSprinkle with 1/4 cup ParmesanHeat oven to 350 degreesCover with aluminum foil and bake for 30 minutesUncover and bake about 30 minutes longer or until hot and bubblySprinkle with the extra mozzarella cheeseLet stand 15 minutes before cuttingTo make ahead: Refrigerator stored: You can also make this ahead and cover with aluminum foil and refrigerate up to 24 hours (but not longer)To cook from refrigerator - 1 1/2 hours before serving, heat oven to 350 degreesBake, covered in pan for 45 minsUncover, bake 15 to 20 minsor until hot and bubblyFreezer stored: You can also wrap it tightly with foil and freeze for up to 2 monthsTwo hours before serving heat oven to 350Bake covered in pan 45 minsUncover and bake 35 to 45 minslonger or until hot and bubblyGood Luck on your exam!!!!!!
