My house has copper pipes. The presence of trace metals from water sitting in the pipe can be mediated by allowing the water to run before drinking it (so that the water coming out of the tap has not been sitting stagnant in the pipe) or by using those filtration systems like Brita.
Copper is the best thing for home water pipes.

Actually copper pipe are the best material for water, other than stainless steel (which is too costly for residential water piping.) The little bit of trace copper that ends up in the water is actually good for you. Some older copper piping may have a bit of lead in the solder but if this is a new installation that is not longer the case. Even the newer PEX and PVC do leach a few chemicals into the water. Some municipalities in the USA prohibit the use of PVC and CPVC for drinking water piping. I have always replaced the old piping in my homes with copper. It is considered the most favorable for resale home value.
