I have heard that drinking from aluminum cans is bad for our health. However, I have learned that today's 'aluminum' cans are actually more like a plastic can due to all the coatings, etc. Do we really have any risks associated with regular cans?

Aluminum is dangerous when you breath high levels from the air. There is no evidence that liquids stored in aluminum cans leach in enough aluminum to have any effect at all. Quite often these sorts of rumors/assertions start with that kind of kernel of truth. Remember though, chemistry is complex. A chemical that can kill you in one state/amount is pretty harmless in another. For example, hydrogen dioxide is deadly when taken in large amounts, but it is safe in the amounts we normally drink.
It seems to me like food that comes out of a can has a slight metallic taste to it. Even though there's a plastic lining it still tastes like it contains trace amounts of aluminum for some reason.
Most, if not all parents go through this torment. You're damned if you do, you're damned if you don't! With our son, I felt uncomfortable with letting him have more than one at a time (on the current schedule in UK, they have 3 at a time on one appointment!). We've split them up now so he only has one every 4-5 weeks. I did lots of reading and found that most problems occur after several doses, this way we'll know if he has any type of reaction to any particular vaccination and he won't have the next doses. So far he's been fine. We also gave him a small amount of sugar water before his most recent vaccination as studies have shown it helps babies deal with stress. It made a huge difference and he barely cried. Have some infant Calpol/Tylenol ready at home to give him if he has a fever or is irritable and just watch him... and only allow him to have the vaccinations you believe are necessary and that you're comfortable with.
Aluminum cans have a thin plastic lining. This lining prevents the leeching of aluminum into the liquid it contains. The big health scare over aluminum was over research done on Alzheimer's disease. Autopsies revealed a higher concentration of aluminum in the brain of some patients with Alzheimer's. It is unknown whether aluminum was a possible culprit, or the diseased tissue for some reason just held onto more aluminum. Further research has not been able to duplicate these results; autopsies of some patients show no increased levels of aluminum. [1], [2], [3], [4] Aluminum toxicity is rare and usually found in patients with renal failure. [5] The amount of aluminum you would be exposed to even if cans were not coated wouldn't cause you any harm.
