Wash your counter really well or maybe your table and then apply a sanitizer solution (bleach and water work well for a cheap solution) (10parts water to 1part bleach) and yes I would sprinkle the surface with flour too in ordeer to avoid sticking and foil or wrap will just cause a tremendous mess and you wont be able to roll anything
