Question:

Can I cook my turkey on a baking sheet?

Christmas morning I had a horrible dream that my 20+ pound turkey didn't fit in the roasting pan.and it came true (why not all my dreams about Prince Charming?)So Christmas dinner had to be postponed (we ended up having breakfast instead - pancakes, bacon, eggs, and coffee from my new Keurig! :))I have a shallow baking sheetCan I cook my massive turkey on that, if it tent it with aluminum foil?

Answer:

Actually, Ti leaves are usedOnly place I've seen these leaves are in an Asian marketIf you're really stuck without any alternatives, you can try tamale wrappers (dried corn husk)Editif you must use something else, as mentioned below, foil might work, but I would also consider parchment paper or wax paperHowever, foil might be the least expensive optionThe downside about foil and parchement, is that you may not get the water penetrating the wrapper to cook the riceYou may need to wrap looselyCollard and fresh veggies won't workThey'll fall apart during the cooking process.
It will probably work, but you may end up with more juice than the shallow pan can holdYou should also roast a turkey on a rack so that hot air can circulate around the birdAnd if you tent the turkey while it roast, you will steam the skin and it won't get brown and crisp.
