You can freeze either the unbaked cookie dough (I'd wrap it well in plastic wrap and then put that inside a ziplock bag) or the baked cookie cake (also double wrapped, using plastic wrap then aluminum foil or freezer paper if you don't have a large enough ziplock bag.) I think the better option is freezing the dough; most basic cookie doughs handle freezing and thawing well, but baked goods can sometimes change in texture when frozen and thawedI don't think that would likely happen with this recipe/type of cookie, but it's just my opinion that freezing the dough is the better optionJust take the dough out of the freezer a day or two before planning to bake it and let it thaw in the refrigerator, then maybe take it out of the frig an hour or so before baking so it's ready to bake (unless the dough was supposed to be chilled before baking.)
