It's for a miniature wedding cake which I'll be traveling with in an RVWill need to be frozen about 2 weeks before the happy eventAny recipe hints?
I freeze my cakes all the time, I think they taste betterSo go ahead, don't worry, it can be done without any change to the taste or texture of your cake I use aluminium foil and then put it in a freezer Zip Lock Bag My only concern is if your icing is quite elaborate and specially nice, and I expect it will be if is is a wedding cake, I would freeze the icing apart in a container, thaw it and ice the cake a few hours before it get servedHope the wedding is great.good luck!
