I don't want anything too complicated, I don't know much about cooking fish and don't want to have to buy any weird spices/seasonings that I won't use muchThanks.

I have 2 great salmon recipes that everyone in my family enjoys In a pyrex or microwave safe dish, place a salmon steak with the skin side downIn a small dish mix together 3 Tbsp bottled Italian dressing (any brand)and 2 tsp Worchestershire sauceSprinkle this sauce mixture over the salmonCover the dish with saran wrap and cook on high for 11 minutesThe wrap will swell up as the fish cooks and steam is releasedBe careful to not burn yourself when you unwrap the dishOther modifications that I've made to this recipe are: to substitute the dressing/Worcherstershire with lemon or lime juice, add minced garlic or onions, and even sprinkle of capersMy second suggestion is one that no one will ever try until they taste itAny firm white fish will work well but we like salmonHeat your outdoor grillOn a piece of heavy duty aluminum foil, spray a light coating of PAM or butter lightly with oil or margarineCoat both sides of the fish in mayonnaise (not salad dressing)Lay fish on foilOn the top part take brown sugar and press it into the mayonnaiseYou want to use enough brown sugar that you end up with about a 1/2 inch layer on top of the mayoNow grill the fish for 8-11 minutes or until the brown sugar becomes bubblyFlip the fish and spread the sauce on that sideCook until all the sugar is meltedIt is amazing.but don't tell anyone what it is made from until they taste it.
