The way I do it is I cut the potato into thin slices, I put a slice of lime in a bowl of water or squeeze the lime. Whichever you prefer. I add about 6 spoons of vinegar but the more vinegar you put the stronger the lime will taste coz the potato will absorb it with the vinegar. Anyway put the slices of potato in the mixture for about 2 hours and add salt. voila :) fry your potato chips. Your gonna love it!
So you see you get a lime and a bag of potato chips. Poor the potato chips in a bowl and squeeze away on that lime. Enjoy.
I have no idea, but it seems like you might want to use a mandolin to thinly slice russet potatoes. Soak the potatoes in a brine of lime juice, water, and salt. I'd let them marinate for a while then drain. Fry them up in hot peanut oil and drain. Sprinkle with a mixture of kosher salt, lime powder, and garlic.
