I am fairly new to cooking on a charcoal grillI know some meats need more time to cook that othersWhen do you keep the vents open and are you ever supposed to close them? I was thinking about grilling a BBQ beef brisket and i hear those take alot of timeWould the vents be closed when im grilling a BBQ beef brisket?
