I'd say it's moldmoisture can form when there is a temperature differential, much like moisture condenses on the outside of a cold glass of water.
Are you sure the paper on the insulation turned black or was the the original colour of the paper? Also, some older paper wrapped insulation; the paper on the inside against the drywall was tar impregnated (2 sheets of paper with tar in between)As it aged, the tar blackened the out sheet of paper.
The black stuff could be a moisture barrier You can rule out mold by getting a test kit from a hardware store It still could be moldThe drywall might have been replaced after the moisture problem was fixed, but the insulation not replaced There are over 100,000 species of mold, so even if is is mold, it may not be the harmful black mold.
