I should know this since I live in Florida, but I rarely use limes.I heard a chef say limes have no seeds. But others seem to think there are.So what do you think? Thanks for your time and trouble to respond.
There is no different between key lime and regular limes. Key limes are simply immature limes.
Key limes are much smaller (ping-pong to golfball-sized) thanregular limes, nearly spherical, thin-skinned, and often contain a few seeds. Green key limes are prized for their acidity. As they ripen to a yellow color, the acid content diminishes greatly, resulting in a sweeter fruit. The juice is not green. When you see green key lime pie...it's been colored with food coloring. They also are more yellow than the more common green limes.
