Freezer Meals?

Anyone have any good recipes for meals that can be made ahead of time and frozen? My job is going to limit the time I can cook, so I am going to plan a day and cook and freeze a bunch of mealsAny help would be appreciated!! Thanks in advance! : )

It's rather simple, but I absolutely love slicing the ham (thin, put not paper thin) and broiling it so the edges get all super crispyServed with homemade french fries and sunny side up egg (must have the runny yolk for dipping!) it makes a great breakfast, lunch or dinnerTomato slices on the side just DOUSED in salt and pepperYou could also make a type of ham a la king, with cubed ham, frozen peas, diced and sauteed onion and mushroom soupJust saute the onions, add the other ingredients and warm throughIt's great over potatoes, rice or just a nice thick slab of crusty breadIf you want to be a bit more adventurous in your cooking and your ham has a bone in it, try split pea soup: 2 1/4 cups dried split peas 2 quarts cold water 1 1/2 pounds ham bone 2 onions, thinly sliced 1/2 teaspoon salt 1/4 teaspoon ground black pepper 1 pinch dried marjoram 3 stalks celery, chopped 3 carrots, chopped 1 potato, diced In a large stock pot, cover peas with 2 quarts cold water and soak overnightIf you need a faster method, simmer the peas gently for 2 minutes, and then soak for l hourOnce peas are soaked, add ham bone, onion, salt, pepper and marjoramCover, bring to boil and then simmer for 1 1/2 hours, stirring occasionallyRemove bone , add diced hamAdd celery, carrots and potatoesCook slowly, uncovered for 30 to 40 minutes, or until vegetables are tenderThis would go great with a fancy grilled cheese using good bread, sliced ham and brie cheese.

Here is an easy Lasagna dish that freezes very well: 8-10 servings 2 cups ricotta or small curd cream cheese 1/2 cup grated Parmesan 2 tspn parsley 1 1/2 tspn dried Italian seasoning 2 jars spaghetti sauce 12 uncooked lasagne noodles 2 cups shredded mozzarella cheese (8oz) 1/4 cup grated Parmesan mix ricotta, 1/2 cup Parmesan and parsley spread 2 cups spaghetti sauce in 13x9x2 inch pan top w/4 noodles spread cheese mixture over noodles spread 2 cups spaghetti sauce top w/4 noodles spread 2 cups spaghetti sauce top w/4 noodes sprinkle with 2 cups mozerella spread remaining sauce on top sprinkle w/ 1/4 cup Parmesan cheese To cook now: heat oven to 350, cover w/ aluminum foil bake for 30 minsUncover and bake about 30 mins longer or until hot and bubblySprinkle with mozzerella cheeseLet stand for 15 minsbefore cuttingTo freeze: Wrap unbaked lasagne tightly w/ aluminum foilFreeze no longer than 2 monthsTo cook from freezer: About 2 hours before serving, heat oven to 350Bake covered 45 minsUncover and bake 35 to 45 minslonger or until hot and bubblySprinkle w/ mozerella cheeseWait 15 minsbefore cutting(Note you can also store this in the refrigfor up to 24 hours after assembling the lasagna - bake 45 minscovered - 20 minsuncovered or until hot and bublySprinkle w/ cheese wait 15 minsbefore cutting)
