So, my volkswagan Passat keeps sounding its alarm every time I open the door, even if its unlocked. I tried unplugging the wire that works it, but it still does it. It‘s off right now, but I can‘t open the door or start it because the alarm will go off. How can I stop it?

Not hard to do. Just turn the alarm off by putting the key in the driver's door, and turning CCW 90 degrees. The alarm module is behind the glove box, and may need replacement. Try one from a salvage yard. Have them mark the one you buy, so that you can return it if you don't like the results.
